Hi, I’m new here and about two weeks into owning a 2016 eGolf with 86K miles. Great car.
Question: charging at home only so far, it’s only ever charged to 83 - 85 miles of range. Today I drove it down to 9 miles of range and charged it when I got home. It charged to a range of 98 miles. Why so much higher?

The range estimate is based on a weighted average consumption. If I remember correctly, it's over last 30 km or so.
Meaning if you drove more economically before charging the range will be longer.

Range shown is GOM (guess - o - meter) and is an estimate of range based on recent driving style, ambient temperature and HVAC usage. 80-100 miles is reasonable for this car.

Well, no one asked the most basic question, so I'll ask just to be sure—did you charge it to 100% charge every time?

Other than that, are you in the southern hemisphere? As spring/summer is coming on there, it could have warmed up over the last few weeks, which will give you more range.
